Recipe:
1:2 ratio
1 cup herbal infusion
2 cups honey
1 part herb infusion to 2 parts honey. Start with 1.5 parts water as you’ll lose about .5 of it from steam & some water left in the plant matter when strained
Be sure to make it a potent infusion. Say you’re starting with 1 & 1/2 cups water add in about half that amount in herbs so 2/3 cup of herbs. You can adjust this ratio as you like but I prefer mine to be strong in the end so i’m using quite a bit of plant matter in relation to water
Directions:
Steep herbs in water for 15-30 minutes. Making a strong herbal tea
Strain out plant matter
Add syrup to the warm tea
Blend them until smooth and combined well
Pour the syrup into a glass jar + store in fridge for longer shelf life
Favorite herbs for honey syrup
fresh lemon balm, lemon verbena, mint
dried chamomile, rose, hibiscus, milk thistle, butterfly pea flower, calendula
Don’t let the herbs listed above limit you from using some of your favorites, really any herb can be made into an herbal infused honey syrup.
Something to think about when using fresh plant is that there is some water that’s going to come out of the plant, if it is a plant with a high water content then it’s going to add more water to the overall ratio and kinda throw things off. So either adjust the amount of honey you use accordingly or be sure to keep the fresh plant infused honey syrup in the fridge to increase it’s shelf life.
I prefer keeping my herbal infused honey syrup in the fridge weather working with fresh / dried herbs because the addition of water to honey greatly decreases it’s shelf life and antibacterial properties which create’s an environment that’s easier for bacteria to grow in.
However this herbal infused syrup is so delicious it most likely won’t last long enough for it to go bad!
Things to look out for in your honey as a way to tell if bacteria is growing are bubbles or a film that wasn’t there when first poured into the jar and a distended lid, due to gas produced by bacteria in the solution.
